Black Bean Quesadillas

Ingredients
1 pkg. fresh cuts in a snap! Asian-Style Mix
(1) 15-oz. can black beans, drained and rinsed
Kosher salt, to taste
4 large flour tortillas
2 cups shredded Monterey Jack cheese
Cooking spray

Step 1
In a medium bowl, combine fresh cuts in a snap! Asian-Style Mix and the black beans. Season with Kosher salt and set aside.
Step 2
Preheat a large skillet coated with cooking spray over medium heat. Scatter about ½ cup of shredded Monterey Jack cheese on one side of each tortilla. Top each with about ½ cup of the fresh-cuts black bean mixture, then top with the remaining shredded Monterey Jack cheese. Fold over the untopped side of the tortilla to conceal the filling. Carefully transfer one filled tortilla to the skillet and cook, one at a time, for about 4-5 minutes per side. Serve immediately.
