1 pkg. meal in a snap! Cajun Style Kit
8 large eggs
⅓ cup heavy cream
½ tsp. Kosher salt
Cooking spray
12 oz. andouille sausage, sliced into rounds
½ cup shredded Monterey Jack cheese

Step 1

In a medium saucepan, bring 2- cups of water to a boil. Add rice packet and cook until done, about 15 minutes. Set aside.

Step 2

Preheat the oven to 375ºF. In a large bowl, beat the eggs with the heavy cream, salt, tomato sauce, and Creole Seasoning. Set aside.

Step 3

Coat a large nonstick oven-proof skillet with cooking spray and place over medium heat. Add the andouille sausage and cook until lightly browned on both sides. Remove from the pan and set aside. Add the green bell pepper, onion, and celery to the skillet and cook for 4-5 minutes, stirring occasionally, until the vegetables start to soften. Add in the cooked andouille sausage and the rice and stir to combine. Carefully pour in the egg mixture into the skillet and allow to cook for another 2-3 minutes, or until the egg starts to cook around the edges. 

Step 4

Sprinkle the cheese over the top and then transfer the skillet to the oven to cook for another 10-15 minutes, or until the eggs have firmly set. Allow to cool slightly before serving.
