Classic Shrimp Jambalaya
Starts with: fresh cuts in a snap! Classic Trinity Mix
Ingredients
2 Tbsp. grapeseed oil, divided
9 oz. andouille sausage, sliced into rounds
2 Tbsp. Cajun seasoning
3 garlic cloves, finely chopped
14 oz. can crushed tomatoes
1 tsp. Kosher salt
1-½ cups uncooked white rice
3 cups low sodium chicken broth
1 lb. extra-large shrimp, peeled and deveined
Step 1
Heat 1 Tbsp. grapeseed oil in a large Dutch oven over medium heat. Add the andouille sausage and cook until lightly browned on both sides. Remove with a slotted spoon and set aside.
Step 2
Add the remaining 1 Tbsp. grapeseed oil to the Dutch oven followed by the fresh cuts in a snap! Classic Trinity Mix and the Cajun seasoning. Sauté until the vegetables are soft and transparent. Add the garlic and cook until fragrant, about 30 seconds.
Step 3
Stir in the crushed tomatoes, salt, and the browned andouille sausage. Allow to cook for 5 minutes, stirring occasionally.
Step 4
Add in the white rice and chicken broth. Bring to a boil then reduce heat to medium-low, cover, and allow to cook for 20-25 minutes.
Step 5
Add the shrimp and gently stir them in. Cover and allow to cook until the shrimp are cooked through, about 5-6 more minutes. Remove from heat and serve.
