Teriyaki Egg Roll Bowls

Ingredients
Cooking spray
1 lb. ground turkey breast
(1) 16-oz. bag coleslaw mix
Sriracha mayo, for serving (optional)
Green leaf lettuce, for serving (optional)
Step 1
In a medium saucepan, bring 2-½ cups of water to a boil. Add rice packet and cook until done, about 15 minutes. Set aside to cool.
Step 2
Coat a large nonstick skillet with cooking spray and place over medium-high heat. Add in the ground turkey breast and break it apart with a wooden spoon or spatula. Add in the garlic seasoning and cook, stirring occasionally, until browned and cooked through, about 7 to 8 minutes.
Step 3
Reduce the heat to medium-low then add in the red bell pepper, green onion, celery, cole slaw mix, and Teriyaki sauce. Stir to combine and cook for another 4-5 minutes. Remove the skillet from the heat.
Step 4
To serve, add a leaf or two of green leaf lettuce (if using) to each bowl, followed by some rice. Top with the Teriyaki ground turkey and vegetable mixture. Garnish each bowl with a drizzle of sriracha mayo (if using) and serve immediately.
