Thai Curry Dumplings

¾ lb. ground pork
(1) 16-oz. pkg. round dumpling wrappers
1-2 Tbsp. canola oil
In a medium saucepan, bring 2-½ cups of water to a boil. Add rice packet and cook until done, about 15 minutes. Set aside.
In a large bowl, add the ground pork, red bell pepper, green onion, celery, tomato sauce, and curry seasoning. Mix well to combine.
Fill a small bowl with water. Line a sheet tray with parchment paper. To form the dumplings, add about 1 Tbsp. of the pork filling mixture to a dumpling wrapper. Dip a finger into the water and draw a circle around the edges of the wrapper. Fold the wrapper in half over the filling. Using your thumb and index finger, start making a pleat about once every ¼” on the top part of the wrapper from the right towards the left. Once each pleat is made, press it down with your thumb and move toward the left. Continue all the way until there is no more wrapper left to pleat. Place the sealed dumplings on the parchment-lined tray until all have been formed.
To cook the dumplings, add 1 Tbsp. canola oil (per batch) to a large nonstick skillet over medium heat. Add 8-10 dumplings to the skillet and allow to cook for 3-4 minutes, or until the bottoms start to brown and crisp. Carefully add in ¼ cup of water and quickly cover the skillet with a lid. Allow the dumplings to steam until cooked through, another 3-4 minutes. Transfer the cooked dumplings to a serving tray and repeat the process for the remaining dumplings.
Serve alongside the cooked rice and enjoy.
